Cuban Pork w/ Mojo | Cuban Picadillo | Jamaican Jerk Marinade 
 Key Lime Margarita Grilled Chicken | Key Lime Pie

Here's several wonderful Key West dishes that you can try at home.  All recipes require very little preparation time and use easy to find ingredients.

   Cuban Pork with Mojo Sauce

2 lbs. boneless pork loin roast
1 cup extra virgin olive oil
14 cloves of crushed garlic
1 cup key lime juice
1 tsp. ground black pepper
1 tsp. salt
1 1/2 tsp. cumin

Try Mojo sauce on other meats.  It's a great marinade for grilled chicken.

Preheat oven at 350°.  Place the garlic & olive oil in a 1 qt. pot.  Over medium-low heat, gently sauté the garlic until soft.  Add lime juice & spices.  Bring sauce to a boil.  Reduce heat, cover and simmer for 5 minutes.

Place the roast in a covered ovenproof casserole.  Pour 1 cup of the mojo sauce over the pork.  Cover and bake for 1 hour.  During cooking, baste the roast twice.  Remove from oven and shred the pork with 2 forks.  The loin should easily fall apart.  Add more mojo if necessary.   Excellent with yellow rice & black beans.  Serves 6.


   Cuban Picadillo  

2 lbs. ground beef
1/2 cup olive oil
2 medium diced onions
5 cloves of crushed garlic
1 Med. red or yellow bell pepper
1/3 cup catsup
8 oz. can tomato sauce
1/4 tsp. ground black pepper
1/4 tsp. salt
4 bay leaves
1 tbsp. oregano
1/4 cup stuffed Spanish olives

      -or- raisins


Sauté the onions & bell peppers in olive oil.  Add the garlic & ground beef. 

Continue cooking until the beef is browned.  Drain if necessary. 

Stir in remaining ingredients and simmer for about 40 minutes.  Excellent with yellow rice & black beans.  Serves 6.

   Jamaican Jerk Marinade

2 chopped onions
1 bunch chopped green onions
5 tbsp. soy sauce
2 tbsp. vegetable or olive oil
2 tbsp. apple cider vinegar
1 1/2 tsp. ground tyme
2 tsp. ground allspice (important!)

1 tsp. nutmeg
1 tsp. cinnamon
2 habenaro peppers
2 tsp. ground black pepper
2 tsp. salt
4 tsp. sugar

Place all ingredients in a food processor or blender and mix well. Whether roasting or grilling, this marinade is an incredible way to spice up pork, chicken or beef.  Marinate meats overnight in a covered glass dish or in zip lock plastic bags.  Refrigerate leftover marinade in a sealed container, and it should last for several weeks.


   Key Lime Margarita Grilled Chicken

4 boneless chicken breasts
1/2 cup key lime juice
1/2 cup tequila
1 tbsp. orange zest
1/2 tsp. salt


Place chicken in a glass dish or a zip lock plastic bag.  Combine other ingredients and pour over chicken.  Refrigerate & marinate for 2 to 3 hours.  Grill chicken while reserving the marinade.  Baste occasionally until cooked.  The remaining marinade can be used as a sauce if brought to a boil for about a minute and simmered for 5 minutes.
